After Thanksgiving Turkey Salad

I think my favorite part of Thanksgiving is the day after and the leftovers. It seems that the pie taste better, the turkey, the mashed potatoes, and the stuffing and gravy. Besides left-overs you can make such wonderful things. Potato Cinnamon Rolls, Turkey Sandwiches, Stuffing Bread, Turkey Tetrazzini, Sweet Potato Soup, or Cranberry Jell-O! I can hardly wait! Hope you have a wonderful Thanksgiving with those you love.

After Thanksgiving Turkey Salad

4 cups cooked, chilled and cubed turkey
2 Cups diced celery
2 hard-boiled eggs, sliced
1 tart apple, cut into bite sized pieces
¼ Cup Green onion, sliced
1 cup diced almonds
2 cups purple seedless grapes, cut in half


1 ½ Cups Mayonnaise
1/2 teaspoon white pepper
1 teaspoon Salt
2 teaspoons turkey or chicken bouillon paste (I use Better Than Bouillon brand)

Combine salad ingredient in a large bowl. In another bowl combine all dressing ingredients and whisk until combine and chicken paste is incorporated. Pour over salad and stir until turkey is well covered, you may have to add more mayo depending your taste. Chill until ready to serve. Great as a sandwich filling or just as a salad.

*Gluten Free make sure the bouillon paste is GF, and use Gluten Free Bread for sandwiches.
