This is a great and different salad. Everyone raves about it when I serve it. You can add grilled chicken breast sliced on top and call it dinner.
Blue Cheese & Apple Salad
1 large 12 oz. bag of Lettuce mix (I like Romaine)
1 Gala, do not peel, or similar tart apple cut into bite size pieces (add about 2 TB orange juice to prevent browning of apples)
1 cup Craisins
4oz Crumbled Blue Cheese or Feta Cheese
1 Cup Toasted and Chopped Pecans
4 Green Onions, sliced
1 small can Mandarin Oranges, drained
Arrange the lettuce onto 4 serving dishes or a medium bowl. Arrange other ingredients on top of the lettuce and add dressing and serve immediately.
1 Cup Olive oil
¾ Cup sugar
1 TB dry mustard
1 TB Salt
1 ½ TB Poppy Seeds
¼ cup White or Red Onion, chopped
1/3 Cup Red Wine Vinegar
1 Tablespoon Lemon Juice
Combine all the dressing ingredients into a blender. Turn the blender on and process about one minute.
Arrange the salads and then top with dressing.
