Canadian Cheddar Cheese Soup

It is soup time at the Dairy Keen. We are cooking up our award winning soup. The Dairy Keen won Best of State for our soups. We are so proud of that award, but I am even more proud that you love our soups.

I really love to make soup and I am always looking for new recipes. You should email some of your favorites to me. I got this recipe from Walt Disney World. Of course I changed it a bit, but isn’t that the fun in cooking, making the recipe your own.

Canadian Cheddar Cheese Soup

3 cups diced potatoes
1 1/2 Cup of celery, diced
½ pound bacon
6 cups chicken broth
1 cup medium red onion, diced
2 teaspoons Garlic, chopped
2 Tablespoon Butter
3/4 Cup all-purpose flour
6 cups half and half
1 pound grated SHARP cheddar cheese
2 teaspoon Tabasco sauce
1 ½ TB Worcestershire Sauce
1 tea. salt
3/4 tea. White pepper
12 oz. Beer (I used non-alcoholic O’Doul’s)
Chopped bacon for garnish

In a large Soup Pot cook the bacon until crisp. Remove the bacon and set aside to cool. Crumble for garnish when cool. In a separate large pot add chicken broth and potatoes, simmer until potatoes are done. To the bacon grease, add the onion, celery and butter and sauté until the onion has softened about 5 minutes. Add garlic and simmer another minute. Add the flour and cook over medium heat, whisking constantly, for about 3 minutes. Whisk in the half and half. Whisk constantly until thickened, about 15 minutes.

Add the chicken broth and cooked potatoes. Add cheese and stir until melted. Add all other ingredients and heat until 165 degrees. Serve the soup and garnish with diced bacon and more shredded cheese.
