We are all getting ready for Super Bowl, but mostly for the foods. I always make foods from the State the game is being played at. California this year so that will be easy to find foods. So who will we be cheering for? Make sure you get your avocados purchased ahead of the game. More avocados are sold just before the Super Bowl than any other time of the year.
2 medium ripe avocados, peeled and cubed (preferably Haas avocado)
¼ Cup minced red onion
1 small tomato, minced
1 small jalapeño, seeded and minced
1 teaspoon Salt
¼ cup minced Fresh Cilantro, or more to taste
2 Tablespoons Fresh Lime Juice
Combine all ingredients into a bowl. Serve immediately. Makes about 2 cups.
** If you like the avocado a smoother texture than diced, just mash with a potato masher instead of cubing.
Serve with your favorite Tortilla chips.
8 oz. cream cheese, room temperature
1 cup mayonnaise (I like Best Foods Brand)
2 TB lemon juice
1 tea. salt
8 to 12 oz. imitation crab, broken into small pieces
1 Cup diced celery
½ cup diced green onions
In a large mixing bowl combine cream cheese, mayonnaise, lemon juice and salt until smooth. I use a mixer. Then with a spoon fold in crab, celery and green onions. Stir until combined. Chill at least an hour to combine flavors. Serve with your favorite crackers.
*Can use low fat cream cheese and low fat mayo, no one will ever know!
Imitation crab is NOT Gluten Free. You can use real crab but it is really expensive.
