My husband and I went to Honeyville for a camping trip with his family. We found this awesome treat of Honey Popcorn. We all fell in love with it, so I found a recipe. It is so awesome and sticky and hard to stop eating.
12 Cups Popped Popcorn
1 cup peanuts, optional
1⁄2 Cup Butter
1 Cup Packed Brown Sugar
1⁄2 Cup Honey
1⁄4 teaspoon salt
1⁄2 teaspoon baking soda
1 teaspoon vanilla
Put the popped popcorn and peanuts into a very large bowl or pan. Spread out about 4 feet of waxed paper onto your counter top.
In a heavy medium pot, over medium heat, melt the butter and add the brown sugar, honey, and salt. Stir until combined, place a candy thermometer on the edge of the pan. Boil to a hard ball stage of 290 degrees, about 8 minutes. (300 degrees here at Heber Altitude). Remove from heat and add the soda and vanilla, it will foam up a bit. Stir to combine. Immediately but slowly pour syrup over popcorn and mix well until all the popcorn is covered. Spread popcorn onto waxed paper to cool. You can also shape into Popcorn balls before it cools.
*You can also use the Corn Puffs in place of the popcorn.
*Gluten free as written, to make Dairy free use margarine instead of butter.
