Dutch Oven season is here! A Mountain Man Breakfast is everyone’s favorite. The hardest part is waiting for it to cook. Plan on about an hour and a half with getting the coals ready, and cooking the sausage. I sometimes use diced ham and add a bit of oil to cook the onion in. You can make this to your taste, leave out the bell pepper or add more sausage or both sausage and bacon. You can also serve it inside a Flour Tortilla for a breakfast burrito.
Mountain Man Breakfast
1 pound breakfast sausage or diced bacon
1 small onion, diced
1 red bell pepper, diced
2 pounds packaged shredded hash browns
1 teaspoon salt
½ teaspoon pepper
12 eggs, beaten
16 ounces shredded cheese of choice
Heat 24 charcoal coals. When they are ready to cook with, place the 12 inch Dutch Oven over all the coals, cook and stir the sausage, onion, and bell pepper together until the sausage in cooked and the onions and bell pepper are tender. Do not remove the grease.
Add the hash browns to the onion mixture and add salt and pepper. Stir to combine.
Pour the beaten eggs evenly over the top of the potatoes. Do not stir.
Place the Dutch oven Lid on top, and place 16 of the coals on the top of the lid. Arrange the remaining 6 coals on the bottom of the pan, spread out evenly.
Cook for about 40 minutes, or until the eggs are firm and hot. Turn the pan about every 15 minutes so as not to have hot areas on the bottom of the pan. Just before serving, sprinkle with the cheese and cover until the cheese has melted about 5 minutes.
You make in a 13×9 pan, cover with foil and bake in a regular oven at 350 degrees for 30 minutes.
