I hadn’t had rice pudding in a long time, but I tried some when I we went to Lamb’s grill for lunch. It was a blast from the past walking into this famous restaurant in downtown Salt Lake. You should go check it out for lunch sometime. You never know what famous person you might see there.
This is my mother’s favorite dessert. I make a batch and she will have it for breakfast, lunch, and dinner. I love rice pudding too and this is so simple you will never buy that stuff that comes from the store again. Hope you and your family enjoy it too.
Old Fashioned Rice Pudding
¼ teaspoon salt
½ Cup White Rice
1 Cup Half and Half
1 ½ Cups Milk
1/3 Cup Sugar
1 teaspoon Vanilla
1/4 Cup Raisins, optional
Nutmeg or Cinnamon to sprinkle on top of each serving
In a large saucepan, combine Salt, Rice, Half and Half, Milk, and Sugar. Cover and bring to a boil. Reduce to a simmer and cook for 40 minutes, stir occasionally. Remove lid and continue to simmer, stirring frequently until mixture starts to thicken, about 15 more minutes. Remove from heat, stir in vanilla and raisins. Serve warm or chilled, sprinkle each serving with the nutmeg or cinnamon.

** To make Dairy Free use 2 ½ Cups of Almond Milk instead of the Half and Half and Milk.
