I love this recipe and I haven’t had it for a LONG time. There is now a taco seasoning mix that is Gluten Free so I was happy to have this again. The Catalina Dressing sounds odd but trust me it really works. It is a super-fast dinner, and everyone can add their favorite ingredients to their plate.
Fast Taco Salad
Serves 4 to 6
1 pound ground beef (or ground turkey) 1 packet taco seasoning Water (whatever the back of your packet of taco seasoning requires) Doritos or Fritos 1 can dark red kidney beans, or canned chili beans ½ head lettuce, shredded 1 cup of Cheddar Cheese, shredded 2 tomatoes, diced Dairy Sour Cream Bottled Catalina dressing or Ranch Dressing
Brown the hamburger and drain off excess fat. Add packet of taco seasoning (whichever one is your favorite or if you make your own). Add necessary water (following directions on back of package). Let water reduce until the beef mixture is thick and the flavors have combined. Now it is ready to serve. Add a handful (or more) of Doritos onto your plate, crush them up a bit to make easier to eat. Top with a little taco beef mixture, then add whatever toppings you prefer; kidney beans, shredded lettuce, cheese, tomatoes, sour cream and then lightly drizzle with Catalina dressing or Ranch Dressing.
