Peach Cobbler in a Mug / Chocolate Chip Cookie in a Mug

I love peach cobbler, my husband does not. So, I found this awesome recipe for a peach cobbler for one person made in the microwave. I can be eating cobble within 10 minutes. Don’t worry I make my husband a chocolate chip cookie in a mug, so he isn’t left out.

Peach Cobbler in a Mug

Serve 1


½ Cup diced fresh peaches (or canned drained well)

3 teaspoons sugar, divided (brown sugar works too)

1 teaspoon cornstarch

1 Tablespoon milk or juice from peaches

2 Tablespoons flour

1/8 teaspoon baking powder

Pinch of salt

1/8 teaspoon cinnamon

½ teaspoon vegetable oil

1 teaspoon chopped walnuts or pecans, optional


Spray a 2-cup microwavable mug with cooking spray. In the mug, combine peaches, 1 teaspoon sugar, cornstarch. Stir well to blend.

In a separate small bowl combine 2 teaspoons sugar, milk, flour, baking powder, salt, cinnamon, vegetable oil, and nuts. Stir to combine. Spoon mixture over peaches.

Microwave for 2 minutes, let cool a bit before eating. Serve with ice cream of course.


**To make Gluten Free use a Gluten Free flour and to make Dairy Free use almond milk or juice from canned peaches in place of milk.



Chocolate Chip Cookie in a Mug

Serves 1


1 Tablespoon butter, softened

1 Tablespoon white sugar

1 Tablespoon brown sugar

3 drops of vanilla

pinch of salt

1 egg yolk

1/4 c. flour

2 tbsp. chocolate chips –

Combine in all ingredients in a small bowl. Spray a 2-cup microwavable cup or bowl with cooking spray. Place dough into the bottom of the mug. MICROWAVE 40-60 SEC IN A CUP OR BOWL. {single serving} Make a deep dish chocolate chip cookie. It's like a hug from home.
