We are getting ready for the Super Bowl Party at our house, and getting ready to cheer on the Denver Broncos. Every year I make food from the host city, and this year is no exception. There are a lot of New York foods to choose from, Pizza, Hot Dogs, Manhattan Clam Chowder, New York Cheesecake. It is hard to choose, so I will make them all! I will also make this great sandwich recipe. My friend, who lived in Upstate New York, told me about these. They are a great quick sandwich, which I can prep the day before and let them marinate until I throw them on the grill during half-time.
Spiedies Sandwiches
Spiedies (pronounced speedies) are an Italian grilled meat sandwich. The meat is marinated and put onto skewers and then grilled. The hot meat is placed into a fresh soft slice of Italian bread, and then you slide out the skewer. They are famous in the Binghamton area of Upstate New York State.
Serves 4-6
You will need wooden or metal skewers 1 ¼ pounds Chicken breast, boneless & skinless or lamb ½ Cup Olive Oil ¼ Cup Lemon Juice ¼ Cup Apple Cider Vinegar 4 Garlic Cloves finely chopped or pressed 1 Tablespoon Dried Basil 1 Teaspoon Dried Oregano 1 ½ teaspoon Salt ½ teaspoon black pepper 1 Tablespoon dried mint or 3 Tablespoon fresh mint sliced (optional) 4-6 Slices of a soft Italian Bread or soft hot dog buns
1. Dice the Chicken into 1 inch cubes. 2. Whisk together marinade ingredients together. 3. Set aside approximately 1/3 cup of the marinade for drizzling over finished sandwiches. 4. In a large plastic bag, add marinade to chicken and refrigerate 1 to 3 days. The acid of the marinade will tenderize the meat. Chicken needs less time than pork. 5. When ready to cook preheat an outdoor grill to medium-high heat. 6. Thread 5 or 6 cubes onto metal or bamboo skewers (soak in water to prevent burning). Discard the remaining used marinate. 7. Grill for 3 minutes on each side until meat reaches 170 degrees. 8. Place 1 or 2 skewers of meat in the bun and grip the meat firmly with the bread and pull out the skewer. 9. Drizzle the cooked meat with the remaining sauce. 10. Eat and enjoy!
You can also use Lamb (which is traditional) or pork. They all taste great. The mint taste best with the lamb and chicken.
