Apple Crisp

Camping Time!! I love camping and love cooking in Dutch Ovens and in Foil Packets. Here are some fun “tin foil” desserts.

Apple Crisp for camping Serves 2-3

– ½ cup old-fashioned oatmeal – 6 Tablespoons flour – ¼ cup packed brown sugar – ¼ cup granulated sugar – 1 teaspoon cinnamon – dash of nutmeg – 3 Tablespoon butter, plus 2 more Tablespoons for foil – 3 apples (I used Gala) – squeeze of lemon juice or orange juice

Combine oats, flour, sugars, cinnamon, and nutmeg.  With two knives or pastry blender cut the in 3 Tablespoons of butter until mixture is crumbly, like you do for pie crust.

Prepare the apples by slicing apples; you can peel them if you like. Then toss them with a squeeze of lemon or orange juice.

Cut three squares of foil about 12 x 12 and butter the center 6 inches of TWO pieces with butter, 1 Tablespoon of butter per square. Place the unbuttered piece onto the table, top with one of the buttered foil. Place the apples onto of one of the foil pieces in the butter circle and then sprinkle with the crumble mixture.

Place the other piece of foil (butter side down) on top of the apple mixture. Crimp the edges until the package is well sealed, but DON’T smash the apples with the foil leave space for the air to expand.

Place the foil pack on the fire pit grill over coals for about 20 minutes, turn occasionally.

Remove from grill and let cool a minute or two before opening, as the contents will be hot.

Serve with a scoop of vanilla ice cream.

Campfire Cones

Waffle Ice Cream Cone Mini Marshmallows Chocolate Chips or pieces of chocolate candy bar

Optional: Sliced Bananas Butterscotch Chips Pecans Almonds m&m’s

Fill your cone with marshmallows, chocolate chips and what other fun things you will like. Fill up to the top of the cone only. Wrap the cone in aluminum foil. Place on the grill of your campfire. Place the cone over coals, not the fire. Heat for 7-10 minutes. Remove from fire with hot pads or gloves they should be hot. Let sit for 3-5 minutes so that it won’t be super-hot. It will be messy but yummy!

To make Gluten Free use GF ice cream cones.

HAPPY MEMORIAL DAY – Don’t forget the reason for the season!
