Arugula, Watermelon and Feta Salad

My husband and I had this amazing and different salad at the Disney World’s Food and Wine Festival. I came right home and found about a zillion recipes on the internet. I made this recipe from all of those other recipes; I think it came out awesome. This is perfect for a barbeque dinner or a light luncheon. I hope you love it too.


Arugula, Watermelon and Feta Salad

Serves 4-6

Dressing

1/4 Cup Balsamic Vinegar 3 Tablespoons diced Shallots or Onion 2 Tablespoons minced Garlic 2 Tablespoons Honey 2 Tablespoons Orange Juice or lemon juice 1 Cup Olive Oil 1 teaspoon Salt ¼ teaspoon Black Pepper


Into a blender jar, add all ingredients except oil. Blend until combined. With blender running slowly drizzle in olive oil. Blend until thickened. Add salt and pepper. Refrigerate until ready to serve.


4 cups Baby Arugula salad mix 4 cups bite-sized cubed and seeded Watermelon 2 cups Grape Tomatoes, cut them in half ¼ cup thinly slice Red Onion ½ cup crumbled Feta Cheese ¼ cup sliced Almonds


When ready to serve, make 4-6 plates. First place on the plate the arugula, then drizzle with the dressing. Top with the watermelon, tomatoes, red onion, sprinkle with feta and then almonds. Serve immediately.
