Boot Tracks (Chocolate Waffles)

This are easy recipe, and we had it for Mother’s Day dessert. This is a fun family event. Everyone had an idea of what to put on theirs. My favorite was the Nutella, or Strawberries and whipped cream.

Boot Tracks (Chocolate Waffles)

Makes 6 waffles 1 ½ Cups Flour 1 Tablespoon Baking Powder ½ teaspoon salt ½ Cup sugar 3 Tablespoon Cocoa Powder 1 cup Milk 2 Eggs, beaten 1 teaspoon vanilla 3 Tablespoon Vegetable Oil Powder sugar for dusting Desired toppings

Pre-heat your waffle iron. In a medium bowl combine the dry ingredients. In a small bowl, beat together the milk, eggs, vanilla and oil. Add the liquid ingredients to the flour mixture. Stir just until combined. Let batter sit for 10 minutes.

Spray waffle iron with cooking spray and drop the batter onto hot waffle iron. (My waffle iron uses 1/3 Cup of batter). Close the iron and cook until the waffles are cooked through 1 to 1 ½ minutes.

Remove the “Boot Track” from waffle iron and dust with powder sugar. You can drizzle with some hot fudge topping and add a scoop of ice cream or spread with peanut butter or Nutella. Strawberries and whipped cream are awesome too. This is a great family activity!

** To make GF use 1 ½ cup Gluten Free Flour and ¼ tea. Xanthan Gum. Make sure your Waffle iron is clean from regular waffles.
