Caramel Stuffed Rice Krispie Treats

We had a family dinner last Sunday and our friend, Wendy Sorenson, shared this recipe with our family. We all loved them! I Hope you do too!


Caramel Stuffed Rice Krispie Treats

Caramel Filling

• 14 oz. caramel pieces, unwrapped • 1 can (14 oz.) sweetened condensed milk • 2 Tablespoons butter

Rice Krispie Layers

• 6 Tbsp. butter, divided in half • 12 cups Rice Krispie cereal, divided in half • 10 cups mini marshmallows, divided: 4 cups, 4 cups & 2 cups


1. Butter a cookie sheet pan, set aside Caramel Filling 2. In a large microwave safe bowl combine caramel pieces, sweetened condensed milk and 2 Tablespoons butter. Microwave on high in 1 minute increments (stirring after each) until caramels are melted, approx. 3-4 times. 3. Stir until smooth, set aside.

Rice Krispie Treats (You will make this twice)

4. In a medium sauce pan, melt 3 Tbsp. butter and 4 cups marshmallows. Stir over medium heat until marshmallows are melted. 5. Pour 6 cups Rice Krispie Cereal into marshmallow mixture, stir until coated. Press into the bottom of prepared pan. 6. Pour caramel over top Rice Krispie layer and then sprinkle 2 cups mini marshmallows on top of that. 7. Refrigerate for 20 minutes until caramel has set. (Wash your sauce pan for the next layer.) 8. When caramel has set repeat the Rice Krispie layer (step 4) with remaining ingredients.

Press final Rice Krispie layer on top of caramel.

9. * TIP ~ Use the butter wrapper to press the cereal mixture lightly and evenly into pan. 10. Refrigerate for at least 2 hours before cutting into squares. 11. You can also melt some milk chocolate and drizzle on the top of the bars.


Oreo Rice Krispie Treats

• 6 cups Rice Krispie Cereal • 20 Oreos, chopped • 5 cups mini marshmallows • 4 Tbsp. butter plus 1 Tablespoon to butter the pan.


1. Butter a 9×13 dish. 2. In a large bowl, pour measured Rice Krispie Cereal. 3. Put the Oreos into a zip lock bag and smash with a rolling pin. You want the Oreos to be a variety of sizes, chunky to finely crush. 4. Add crushed Oreos to the Rice Krispie cereal and stir to combine. 5. In a medium sauce pan, heat butter and marshmallows together over medium heat, stirring constantly, until they melt together. 6. Pour melted marshmallows over cereal and Oreos, stir quickly combine all the ingredients. 7. As soon as all the cereal is combined, spread mixture into the prepared 9×13″ dish. Use the butter wrapper to press the mixture into the dish, and flatten as needed. 8. Let sit until completely cooled. (If you can wait!)

*To make Gluten Free use Gluten Free Rice Krispie Cereal OR Gluten Free Puffed Rice Cereal. They also make Gluten Free Chocolate Sandwich Cookies.

These are a fun treat that kids can help with.
