Chex Mixes

Time to choose your team! Super Bowl is a great time to sit and eat those munchies! So here is a new way to share some new and old Chex Mix Recipes. These are great for me because I can easily make them Gluten Free and yet everyone loves them! Can’t wait for the big game, but I think I will just choose the commercials!

Chex Almond Coconut Munchies

2 Cups White Corn Syrup 2 Cups white sugar ¼ tea. Salt 1 ½ cups butter 2 tea. vanilla 1 tea. baking soda 2 cups Shredded Coconut 2 cups Sliced Almonds 1 – 17 oz box Corn or Rice Chex Cereal 1 – 12 oz box Golden Grams Cereal OR 12oz more Chex Cereal of your choice

In a large mixing bowl combine the Coconut, Almonds, and cereals. Set aside. In a large heavy sauce pan combine the corn syrup, sugar, salt, and butter. Bring to a boil and then boil for 5 minutes. Remove from heat add the vanilla and baking soda, it will foam up a bit. Pour the hot syrup over the cereal. Stir gently to combine. Pour the mixture out onto waxed paper to cool.

*To make Gluten Free do NOT use the Golden Grams Cereal just use more corn and rice Chex.

Muddy Buddies 9 Cups Chex Cereal, any variety ¼ cup margarine or butter 1 cup semi-sweet chocolate chips ½ cup peanut butter 1 teaspoon vanilla 1 ½ cup powdered sugar

Measure the cereal into very large bowl. In another glass bowl at least 1 quart in size, microwave chocolate chips, peanut butter, and butter uncovered on high for 1 minute, stir. Microwave 30 seconds longer, then stir until smooth. Stir in vanilla. Pour chocolate mixture over cereal in bowl, stirring until evenly coated. Pour the cereal mixture into 1 gallon plastic food-storage bag, add powdered sugar. Seal bag, shake until well coated. Spread out onto waxed paper to cool.

*To make Gluten Free use Corn or Rice Chex.
