Egg Bites

My daughter-in-law and I love Starbucks Egg Bites, but I am never close to a Starbucks. (I know that sounds crazy as they are everywhere!) I found this recipe on-line and of course tweaked it a bit. Now I make a double batch, so I have enough for the week. I microwave them just to warm them and out the door I go. These are great on the Keto Diet.


Egg Bites

5 Eggs

½ Shredded Gruyere or Swiss Cheese

¼ cup full fat cottage cheese OR ¼ cup cream cheese

½ teaspoon salt

1/8 teaspoon pepper

3-4 slices of bacon


Pre-heat oven to 300 degrees. Spray a 6-cup muffin-tin with cooking spray. Cook the bacon and then cut into bite-sized pieces, set aside.

In a blender place the eggs, cheese, cottage cheese, salt, and pepper. Blend until foamy and completely blended, about 45 seconds.

Pour into each muffin-tin, filling all 6 cups. Divide and sprinkle the bacon between them.

Bake for 25 minutes or until lightly browned and puffy but just set. Remove from oven and let cool for 5 minutes. Remove from pan and enjoy. Store leftovers in the refrigerator and heat in microwave for 20 seconds.

**I use silicone cup cake liners and they were so awesome the egg slide right out and looked exactly like the Starbucks egg bites. Do not use paper liners they will stick to the paper, and you will never get them off.


*Gluten Free as written but check the bacon labels.


** You can use whatever type cheese you like or add precooked sausage instead on bacon. Pepper jack cheese and some green chilis would be awesome too. Throw in some left-over broccoli and or carrots and hey you are getting vegetables too.
