Fresh from the Garden Salad

It is time to harvest broccoli, peppers, zucchini, and tomatoes that you grew yourself. Share some with me, gardening isn’t my thing. This is a fun recipe to take to a party. Everyone always asks for the recipe. It is fresh and healthy too. You can leave out or add more of the things you love.


Fresh from the Garden Salad


2 stalks of Broccoli, cut into bite size pieces

3 Cups of cut into bite size pieces cauliflower

½-1 cup Chopped Red Onion

1 Sweet red bell pepper diced (or green or yellow)

2 cups of prepared Italian Dressing (I love Olive Garden)

1 medium zucchini, cubed

1 medium cucumber, cubed

2 ½ oz. pitted black olives, sliced

1 Large Tomato, Diced or 1 cup Grape tomatoes, cut in half

1 Cup Shredded Cheese, type of your choice. (I love Feta or Mozzarella Cheese Balls)


Add the broccoli, cauliflower, red onion, bell pepper into a large bowl. Add the Italian Dressing and toss to combine. Cover and let marinate at least 2 hours and up to 6 hours. This will soften the broccoli and the cauliflower a bit. Just before serving, add the zucchini, cucumber, olives, tomato, and the cheese. Toss again and serve.

** Gluten Free but check your dressing to be sure it is Gluten Free.

*** Dairy Free check your Italian Dressing for Cheese. And leave off the cheese.
