SCHOOL TIME IS HERE! It is time to start packing those school lunch boxes again. We have come a long way from the brown paper bag with a peanut butter sandwich and a few grapes smashed together. There are some awesome ideas on the internet, google school lunch ideas and that will spark some fun things. Now that being said do NOT buy into the idea that every lunch must be perfect with smiling cheese sandwiches. My idea is to keep things simple and make things your kids will eat. I also found that a little bit of 4-5 things will be eaten the best.
Next time you are eating a salad at the Dairy Keen check out that container. Take them home and wash them for perfect containers for your kid’s lunch. The ranch dressing, we have at the Dairy Keen is perfect to put into your kids’ lunch with some carrots, cucumbers, or pea pods. The pizza sauce we have at the Dairy Keen is perfect for your kids’ lunch with a cold grilled cheese they can dip it and it is like cold pizza. There are so many awesome containers that you can pack their favorite foods so you can make a lunch they will eat.
Flour tortillas made into a turkey sandwich and then cut into bite size spirals, chips and guacamole, a container of nuts that they love, a roast beef sandwich made on a hot dot bun is easier to eat and more fun. Freeze some juice packs to add to the lunch it will keep things cold and will be thawed enough to enjoy by lunch time. Cut up some fruit that they love. Maybe some sushi rolls, my grandson LOVES sushi. Leftovers are great too. A thermos full of the spaghetti from two days ago will be gobbled up at school.
Here is one of my favorite things to have in a lunch.
Mexican Chicken Rollups
1 ½ pounds of boneless skinless chicken breasts
1/2 cup of water
2/3 cup of salsa, divided
1 package of taco seasoning mix, divided
12 ounces cream cheese, softened
1 cup shredded cheese of your choice
Optional ingredients Black Beans, Avocado, Cilantro, Green Onions
6-8 flour tortillas
In a medium pot add the chicken, water, 1/3 cup salsa, and 2 Tablespoons of the package of taco seasoning mix. Simmer until chicken is done, about 10 minutes. Remove chicken from pot and allow to cool slightly. Shred chicken with two forks. You can also put into your mixing bowl and with mixing blades just mix until shredded to your liking. (It is crazy, but it works!)
In another mixing bowl combine cream cheese and the remaining taco seasoning mix, the remaining salsa, and the cheese. Mix until combined. Spread this mixture onto flour tortillas, leaving about a ½ inch border around the edges. Add some of the chicken mixture, spread over the tortilla. Roll each tortilla tightly.
With a sharp knife cut into 1-inch round slices. (Eat the end pieces for yourself – LOL) Cover with plastic wrap and refrigerate until ready to put into your child’s lunch box.
*You can make Gluten free by using taco seasoning mix that is gluten free and use gf flour tortillas. I like the mission brand.
* To make Dairy free use Dairy Free cheeses.
