Monkey Cereal Bars

I love finding new recipes from friends. This was an awesome treat for a game night.


Monkey Cereal Bars


1 cup chopped walnuts or pecans

¼ cup flaked sweetened coconut

¼ cup butter or margarine

1 10 oz. bag marshmallows

2 Tablespoons unsweetened baking cocoa

6 cups Coco Puffs Cereal or Coco-Roos Cereal

1 Cup crushed dried banana chips


Heat oven to 350 degrees. Spray a 13x9 pan with cooking spray. Bake walnuts for 5 minutes.

Remove pan from oven and add the coconut and stir into walnuts. Return to oven and bake another 5 minutes, or until coconut is light golden brown. Stir twice during baking. Set aside to cool.

In at least a 4-quart saucepan, melt butter over medium-low heat. Add marshmallows, cook 4 to 6 minutes. Stir constantly until melted. Stir in cocoa and stir until well blended. Remove from heat.

Stir in cereal, banana chips, walnuts, and coconut. Stir until evenly coated. In the 13x9 pan you used before spray again with cooking spray. Spread the warm mixture into the prepared 13x9 pan. Spray your hands with cooking spray and press down to smooth out. Cool at room temperature for 30 minutes. Cut into bars and enjoy.

*Gluten Free use Malt-O-Meal Coco-Roos instead of Coco Puffs.
