Pasta Salad

It is hot out there! Must be time for a cool light salad!


Pasta Salad

1 ½ cups of dry pasta of your choice (I like spiral pasta) ¼ pound sliced deli meat; ham, pepperoni or salami 1 small cucumber, peeled and diced 1 cup shredded carrot 1/4 cup red onion, minced ¼ cup diced red bell pepper ½ cup sliced fresh mushrooms, optional 1 cup diced cheese; I like to just cut up string cheese into bite size pieces ½ cup sliced olives 1 cup diced fresh tomatoes 1 tea. salt


Bottled Italian dressing, Lite done Right or your favorite brand, enough to cover salad.

Cook pasta according to directions on package. Rinse in COLD water. Add other ingredients.


Pasta salad is something that you can make “your” way. If you don’t like green pepper leave them out. If you love cucumbers double the amount. The light dressing makes this low fat and no one will ever know.


Chili before serving.


*Gluten Free pasta can be used.


Enjoy the heat, it won’t be long before we are waiting for snow.
