Peach Cobbler Bars

It is time for Peaches! I could eat peaches every day when they are in season, and then I won’t touch them when they aren’t Utah peaches. Peach Pie, Peach Ice Cream, Peach Cobbler, and Fresh Peach Pie. I tried this new recipe and I loved them, I have added this recipe to my list of must have peach recipes. Hope you will love it too!


Peach Cobbler Bars

1 Cup Butter, softened 2 Cups Sugar 4 Eggs 1 teaspoon Vanilla 1 Tablespoon Lemon Zest 1 teaspoon Baking Powder 3 Cups all-purpose Flour 1 tea. salt 4 Cups diced fresh peaches (about 8 peaches) 2 Tablespoon Lemon Juice 1/3 Cup Brown Sugar 1/4 Cup Cornstarch 1/2 teaspoon Cinnamon


Pre-heat the oven to 350 degrees.


In a medium mixing bowl, cream butter and sugar together until fluffy. Add eggs and mix to combine. Beat in vanilla and lemon zest. Add the flour, baking powder and salt. Mix until combined.


In a separate bowl combine the diced peaches, lemon juice, brown sugar, cornstarch, and cinnamon. Spray with cooking spray or butter a 9×13 pan and spread 3/4 of the batter into the pan. Spread with the filling. Drop remaining batter onto the top of the peaches.


Bake at 350 for 25-30 minutes or until lightly browned. Cool on wire rack, or serve warm or cold.

*I made this Gluten Free by using Gluten Free flour and ¼ teaspoon xanthium gum.


I made just 1/4 of the recipe and made it in a loaf pan. You could also half the recipe and make in a 9X9 pan.
