Peanut Butter Cup Cookies

These cookies are fun to make and they are fun to take to a family get together in the park. They are also awesome to take camping.


Peanut Butter Cup Cookies

1 ¾ Cup all-purpose flour

½ teaspoon salt

½ cup butter, softened

½ Cup peanut butter

½ cup sugar

½ Cup packed brown sugar

1 egg

1 teaspoon vanilla extract

2 Tablespoons milk

40 miniature chocolate peanut butter cups


Preheat oven to 375 degrees. In medium bowl combine flour, salt, and baking soda. Set aside.

In a mixing bowl cream together the butter, peanut butter and both sugars. Beat until fluffy. Beat in egg, vanilla, and milk. Add flour mixture and mix well. Place into refrigerator for about 30 minutes.

With a mini ice cream scoop, or two spoons scoop into ungreased mini muffin tins. Press slightly to form a ball. Should have 40 balls.

Bake for 8 minutes. Remove from oven and IMMEDIATELY press a mini peanut butter cup into each cookie. Cool for about 5 minutes and then remove from pan.


*To make gluten free use gluten free flour instead of all-purpose flour.
