Penne Pasta With Vodka Sauce

My Husband fell in love with Vodka Sauce at a local restaurant. The

restaurant wasn’t sure if their Vodka was Gluten Free. (The bottle doesn’t come

with ingredients.) You know me, if I can make it Gluten Free I accept that

challenge. Here it is, now we can all enjoy this creamy tomato pasta dish. It was

super simple and quick to throw together. I served it with grilled chicken breast

or grilled shrimp for a fast and great meal.

Penne Pasta with Vodka Sauce

Serves 4-6

1 Tablespoon Olive Oil

½ cup of Diced Onion or Shallots

1 Tablespoon minced Garlic

½ teaspoon red pepper flakes

½ Cup Vodka

1 28 oz. can of Crushed Tomatoes

2/3 Cup Heavy Cream

½ Cup grated Parmesan Cheese, plus more for topping

1/3 Cup fresh Basil leaves, chopped

Salt and Pepper to taste

Cooked Penne Pasta or Spaghetti Noodles

In a large sauce pan over medium heat, add the oil, onion, garlic, and red pepper flakes. Sauté until onion is softened, about 3-5 minutes.

Add the vodka and bring to a boil. Simmer for about 5 minutes, to remove the alcohol and the harsh taste. Add the tomatoes and simmer another 5 minutes. Stir in the cream, cheese, and basil. Heat just until cheese melts.Add salt and pepper and taste for seasoning.

Serve over the hot pasta, top with additional Parmesan Cheese and Basil. Serve with grilled

chicken or grilled shrimp on top.

*Gluten Free use Gluten Free Pasta. To check if the Vodka is Gluten Free, check this web site.
