Pie Irons Breakfast Squares

Pie Irons are so much fun when camping. Pie Irons are usually found in the camping section of either Timberline or Ace Hardware. The best ones to buy are the “doubles” as they are more flexible with larger pieces of bread. We make Grilled Cheese Sandwiches, Pizza Pockets, Puddgy Pies, and Cinnamon Rolls. PIE IRON BREAKFAST

(Make 4)


4 large eggs

4 slices COOKED bacon, diced (or ½ Cup cooked diced sausage)

3 Cups shredded hash browns, (thaw if using frozen)

1 Cup shredded cheese

½ teaspoon salt

¼ teaspoon pepper

3 Tablespoons softened butter


Prepare a campfire or charcoal grill or outdoor cooking stove.

In a medium bowl add the eggs and lightly beat them. Add diced bacon, hash browns, cheese, salt and pepper.

Open your COLD pie iron and spread the softened butter onto each side of the pie iron. Add about 1/4 of the mixture to one side of your pie iron. Close the pie iron. Place the pie iron over the COALS of your fire. Cook turning about every 15 seconds, check to see if done after about 2 minutes. Depending on the heat it might need more time.


Remove the pie iron from the fire and transfer to a plate. Repeat with other the remaining potato mixture and butter.

**To make Dairy Free us dairy free cheese or just leave out. Use dairy free margarine.

If you don’t have Pie Irons you can just “fry” up in a frying pan or a Dutch Oven.
