Ranch Baby Carrots

I am always looking for new vegetable recipes to go with barbequing. This recipe is awesome, it combines two favorites ranch and carrots. Enjoy!

Ranch Baby Carrots

1-pound package baby carrots, rinse and pat dry

2 Tablespoons olive oil

1 Tablespoon Hidden Valley Ranch Powder

1 teaspoon salt

¼ teaspoon ground black pepper

2 Tablespoon butter, melted

1-2 Tablespoon chopped parsley leaves

Preheat oven to 400 degrees. Line a cookie sheet with foil and then spray with cooking spray.

Place carrots into a bowl and add olive oil and sprinkle on the ranch dressing and salt and pepper. Stir to cover all the carrots with the oil and spices. Pour carrots out and arrange into a single layer onto the prepared cookie sheet.

Bake for 18-20 minutes or until tender. Stir about every 5 minutes. Place into serving bowl cover with melted butter and chopped parsley. Stir to combine. Serve while hot.

*You can also cook in an aluminum foil 13x9 pan on your outdoor grill.
