Smoked Salsa

My friend posted this on his Facebook page. It looked so awesome I asked for the recipe. This will be perfect for Memorial Weekend. Thanks


Smoked Salsa

1-pound fresh Roma tomatoes

¼ of a red onion cut into 4 wedges

1 large or 2 small jalapenos cut in half

4 cloves of garlic

1 bunch of fresh cilantro leaves

1 lime, juiced (about 3 Tablespoons)

½ teaspoon of Salt or to taste


Pre-heat your smoker to 225 degrees.

Place tomatoes, onion, jalapeno, and whole garlic cloves into a grilling basket.

Close the lid and smoke for 90 minutes.

Place the smoked vegetables into a food processor with the chopping blade. Add the lime juice, cilantro and salt and pulse until salsa reaches desired consistency.

Pour into serving bowl and eat immediately, or you can cover and place into refrigerator and serve later. Serve with your favorite chips or over smoked chicken that you could be smoking at the same time.


*My friend peels the tomatoes first, by putting the tomatoes into boiling water for about 3 minutes. The peels will slide off.
