Soft Chocolate Chip Cookies

I keep seeing these “Pudding Cookies” on the internet. So, of course I have to try them. Hope you find these fun to make too. My husband loved them and I even made them Gluten Free.


Soft Chocolate Chip Cookies

Makes about 16 cookies

½ Cup Butter, softened ½ Cup Brown Sugar, packed ¼ Cup White Sugar 1 large Egg 1 teaspoon Vanilla 1 ¼ Cup Flour ¼ Cup Instant Vanilla Pudding Mix ½ teaspoon Baking Soda ¼ teaspoon Salt 1 Cup Semi-Sweet Chocolate Chips, or Milk Chocolate Chips, or m&m’s ½ cup chopped Walnuts, if desired


Pre-heat oven to 350 degrees.


In a large mixing bowl beat together the butter and the sugars. Add egg and vanilla, and then beat on medium speed until well combined, about 4 minutes.


In a medium bowl combine the flour, dry pudding mix, baking soda, and salt. Add to the butter mixture. Beat on low speed until just combined, about 1 minute. Add Chocolate Chips and beat until just combined.


Using a cookie scoop that is about 2 tablespoon measure, place cookie dough onto ungreased cookie sheet. Place about 2 inches apart. Press down slightly. Bake for about 12 minutes or until edges are browned. Allow the cookies to cool on baking sheet for about 10 minutes, remove from pan.


** To make Gluten Free us Gluten Free Flour and ¼ teaspoon xanthium gum.
