Turkey or Chicken Salad

I love this salad! It is great because it uses leftover chicken or turkey. You can add more almonds or grapes or apples depending on your tastes. Great to take on a picnic too, just keep cold until ready to eat.


Turkey or Chicken Salad


4 cups cooked, chilled and cubed turkey or chicken

2 Cups diced celery

2 hard-boiled eggs, diced

1 Gala apple, cut into bite sized pieces (no need to peel)

¼ Cup Green onion, sliced

1/2 cup diced almonds

1 cup sliced purple grapes, optional


Dressing

1 ½ Cups Lite Mayonnaise

2 teaspoons chicken bouillon paste (I use Better than Bouillon)

½ Teaspoon white pepper

1 teaspoon Salt


Combine all the salad ingredient in a large bowl. In another smaller bowl combine all dressing ingredients and pour over salad ingredients. Stir until chicken is well covered, you may have to add more mayo depending if your turkey is dry or moist. Chill until ready to serve. Great served on croissants rolls or serve just as a salad on a leaf of lettuce.
