Chopped Broccoli & Brussel Sprout Salad

I am always looking for something different and saw this salad at Sam’s Club, but

I don’t know if it is gluten free so I will make my own. This turned out to be amazing if I

do say so myself.


Chopped Broccoli and Brussel Sprout Salad

1 large Apple leave skins on

1 stalk and florets of raw Broccoli

10 raw Brussel Sprouts

2 large Carrots

½ Cup Dried Cranberries

½ Cup Chopped pecans, and/or ½ Cup pumpkin seeds

DRESSING

½ cup sliced Red Onion

1/4 Cup Olive Oil

3 Tablespoons Honey

2 Tablespoon Dijon Mustard or 1 Tablespoon Dry Mustard

3 Tablespoon Apple Cider Vinegar

¼ Cup Orange Juice

1 Garlic Clove, (or 1 teaspoon minced)

1/2 teaspoon Salt

In your food processor use the largest shred on the grater disk, shred the apple

with the peel on, and toss with about 2 Tablespoons of the orange juice to prevent it

from going brown. Shred the Broccoli, Brussel Sprouts, and Carrots. Add all

vegetables into a medium bowl. Add the dried cranberries, pecans and/or pumpkin

seeds.

To make the dressing

Add all ingredients into a blender and process until combined and smooth. Using

the blender makes it not separate when standing.

Pour dressing over the salad mixture. Toss to combine. Enjoy! Can be made the day

before but add the apple, dressing, and the pecans just before enjoying.

**Could also use the flat disk if your shred disk the holes aren’t very large.
