Conner’s Chorizo Burritos

Conner, an awesome employee at Dairy Keen, brought these super yummy burritos to a company party. They were a huge hit. You can make these ahead and microwave when ready to serve.

Conner’s Chorizo Burritos


Serves 4-6

1 pound Chorizo Sausage, remove from casing

2 large baking potatoes, or 3/4 bag of 20 oz. Bag of Simply Potatoes Cubes

6 eggs

4-6 Flour Tortilla

For Serving,

Shredded Cheese

Sour Cream

Salsa

Guacamole or avocado


In a large frying pan heat the sausage and break it apart. (Like ground beef). When sausage is heated remove from skillet and place onto place. Do not worry about draining the grease.

Wash the potatoes and poke them about 6 times with a knife. Cook in microwave 3 minutes and turn over and cook another 3 minutes and cook another 3 minutes. Test to see if they are soft in the middle. Cook longer if needed. Cut into bite-size pieces. (If using the Simply Potatoes they are ready to add to the pan as is.)

To the frying pan and sausage grease, add the diced potatoes and fry with the grease until heated through. Add the sausage back into the pan.

Break the eggs into a small bowl and stir with a fork. Pour the eggs onto the sausage and potatoes. Cook until the eggs are set, stirring frequently.

Serve on grilled and heated flour tortillas. Serve to your liking by adding cheese, sour cream, salsa, guacamole or avocado.

  • To make Dairy Free use dairy free cheese / sour cream

  • To make Gluten Free us GF tortilla or corn tortillas


These are awesome for breakfast but great anytime.
