Cowboy Macaroni

This is a fun family quick dinner that is great for kids. You can also half the recipe easily.


Serves 6


2 packages (7.5 oz) macaroni and cheese

1 ½ pounds hamburger

Salt and Pepper

1 Cup diced onion

1 Tablespoon minced garlic

15 oz can of tomato sauce

2 teaspoons Italian Seasoning OR Mexican Taco Seasoning , optional

2 cups frozen corn

½ Cup grated cheese, of choice


Prepare the macaroni and cheese according to package directions. Set aside.

In a large skillet, brown the hamburger, salt and pepper, onion and garlic until meat is no longer pink. Break up as you are cooking it. Drain excess grease.

Add the tomato sauce and Italian Seasoning and simmer for 15 minutes.

Add frozen corn and prepared macaroni and cheese and heat through. Top with grated cheese and put lid on the skillet until cheese is melted, about 5 minutes.

Serve while hot.


This is great in an Outdoor Dutch oven when camping too.

*To make Gluten Free use Gluten Free macaroni and cheese.
