Shepherd’s Pie

Outdoor Dutch Oven Time again! This is a great Dutch Oven or regular oven family dinner.


Shepherd’s Pie


Serves 10-12


1 Cup diced onion

1 Tablespoon minced garlic

2 pounds hamburger, browned and drained

1 cup V-8 juice

2 packets of McCormick Gravy Mix (.88oz)

2 cup water

½ tea. white pepper

4 cups frozen carrots

2 cups frozen peas

Potatoes

6 ½ cups boiling water

2 teaspoons salt

½ tea. white pepper

2 cups COLD half and half

¼ cup butter

4 cups instant potatoes Idaho Supreme Potatoes Brand of potatoes

¼ cup Shredded Parmesan Cheese for the topping


In a #12 Dutch Oven Brown Onion and garlic and the hamburger. Break up the hamburger with a “potato masher” as it cooks. Drain the grease.

In a medium bowl, mix the gravy packets with the water and pour onto the hamburger add the carrots and spices and V-8 juice. Simmer until carrots are tender.

To Make mashed potatoes, in another bowl add the boiling water and salt and white pepper. Add the cold half and half and butter. Add the instant potatoes, stir, and let sit about 5 minutes until thickened.

Add the peas to the hamburger mixture and then add the mashed potatoes to the top of the hamburger mixture. Smooth the potatoes out. Sprinkle with Parmesan Cheese. Brown the top of the potatoes by placing under a broiler for 5 minutes.


To make in an Outdoor Dutch oven. Use 24 coals, all on the bottom to brown the hamburger. When simmering the carrots put 8 coals on the top on and 8 on the bottom. When browning the potatoes put all the coals on the top.


To make Gluten Free McCormick makes a Gluten Free Gravy mix.
