Tater Tot Breakfast Bake

We are getting ready for camping! When we are camping that means Dutch Ovens. We love this breakfast bake. Hope you love it too. It isn’t fancy so kids love it too. It also comes together pretty fast.

Tater Tot Breakfast Bake

1 pound breakfast sausage, no casings

¼ cup chopped yellow onion.

1/3 Cups milk

6 large eggs

½ teaspoon black pepper

½ teaspoon salt

2 cups sharp cheddar cheese, shredded.

2 pounds of tarter tots

Heat at least 24 charcoal briquettes. Line your 12-inch Dutch oven with foil or a foil liner. Cook the sausage over medium heat. (I use 20 charcoal briquettes on the bottom). Cook breaking up the meat, when about done add the chopped onion. Cook until onions are softened and sausage in done. (Take paper towels and take off some of the grease.)

In a large bowl whisk together the milk, egg, pepper, salt. Pour over the sausage. Top with the cheese.

Place the tater tots onto of the egg mixture.

Bake with 8 briquettes on the bottom and about 16 on the top. Bake about 30-45 minutes, test to see if eggs are set in the middle. Top with additional cheese and cover until cheese is melted about another 3 minutes.

You can also make this in your home oven. Bake in a 13x9 pan at 350 for about 30 minutes.

Serves 6-8

*Can add items you love, like green chilis and pepper jack cheese. You could use bacon instead of sausage. You could also use diced ham. You can add some chopped green or red bell peppers. Some of us like salsa on it and other like ketchup. Others like to put it into a flour tortilla. Enjoy!

*Gluten Free as written.
