Apple Strudel Muffins

Every year I want to go pick apples at the Huber Grove over in Midway. It looks like so much family fun! BUT once again I am too late and didn’t get reservations. Next year I will meet you there! Google Huber Grove at Wasatch Mountain State Park for reservation NEXT YEAR! Check it out for your family too.


Apple Strudel Muffins

2 cup all-purpose flour

1 1/2 teaspoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

½ cup butter softened butter

½ cup sugar

½ cup brown sugar, packed

2 eggs

1 teaspoon vanilla

1 ½ cup peeled and chopped apples, Gala or Pink Lady (about ¼ inch chop)

Topping

1/3 cup brown sugar, packed

¼ teaspoon cinnamon

1 Tablespoon flour

1 Tablespoon butter, cold


Pre-heat oven to 375 degrees. Grease a 12-cup muffin pan, or use paper liners.

In a medium combine the flour, baking powder, cinnamon, and salt. Set aside.

In a large mixing bowl beat together butter and sugars. When combine and add eggs and beat until smooth. Add the flour mixture and stir to combine. Add the apples and vanilla, stir just until combined.

Spoon into the prepared muffin pans.

In a small bowl combine the brown sugar, cinnamon flour, cut in the butter until coarse crumble. Sprinkle over the dough in the pans.

Bake 20 minutes or until a toothpick inserted comes out clean. Cool on a wire rack.


To make Gluten free use Gluten free flour mix with xanthium gum included. To make Dairy Free use a Dairy free margarine.
