Banana Bread or Muffins

I bought a lot of bananas for all this time at home. They sounded great but after a few days I had very ripe bananas. So off to the recipe book I went. I found this interesting recipe as you cook the bananas. It is awesome it concentrates the flavor of the bananas. Hope you love it too.

Banana Bread or Muffins

1 ¾ Cups All-purpose flour

1 teaspoon Baking Soda

½ teaspoon Salt

5 large Very Ripe Bananas

8 Tablespoon Butter

2 Large Eggs, beaten

1 teaspoon Vanilla

¾ Cup packed Brown Sugar

½ Cup Walnuts or Pecans, chopped


Preheat oven to 350 degrees. Spray an 8 x 4-inch loaf pan with cooking spray, or 18 muffin tins.


In a mixing bowl combine the flour, soda, and salt.

Slice the Bananas and place into a medium saucepan. Bring to a Simmer and cook for about 10 minutes or until the liquid has evaporated. (The bananas will produce liquid as they heat.) Stir often and smash the bananas as you stir. Remove from heat, add the butter and stir until melted. Add the brown sugar and vanilla, stir to combine. Add to the flour mixture, add the eggs and nuts and fold until just combined.

Scoop batter into bread pan or muffin tins.

Bake for 20 minutes for muffins or bake 60 minutes for loaf. Or until toothpick inserted in the center comes out clean.

Cool for 15 minutes and then remove from pan. Continue to cool on a wire rack.


*To make Gluten Free use a GF flour with xanthium gum.

** You can also add 3/4 Cup chocolate chips with the nuts.
