Guacamole & 7 Layer Dip

Super Bowl time is just a few weeks away. I love to make fun things for the game. My family always asks for a few of their favorites too.


Guacamole

2 medium ripe Avocados, (preferably Haas)

¼ Cup minced Red Onion

1 small fresh Tomato, minced (I like Roma tomatoes) optional

1 small Jalapeño, seeded and minced

1 teaspoon Salt

¼ cup minced Fresh Cilantro, or more to taste

2 Tablespoons Fresh Lime Juice

Cut the avocado in half all the way around, twist to separate the halves. To remove the pit; hold the avocado half with the pit in the palm of your hand, take a large knife and chop into the pit, then turn the knife and the seed together one direction while turning the avocado the other direction, and the pit will come out. (Be careful not to chop your hand.)

Slice the avocado into dice while still in the skin. Use a spoon to get out the diced avocado.

Combine all the ingredients into a medium mixing bowl.

Stir to combine and then serve immediately. Makes about 2 cups.

To keep from turning brown put plastic wrap directly on top of the avocado.

This will help, but it is best served within 2 hours.

** If you like guacamole with a smoother texture, just mash the avocado with a

potato masher instead of cubing.

Serve with Tortilla chips.


Seven Layer Dip

10 oz can of Fritos Bean Dip

6 oz of Dairy Sour cream

1 Tablespoon dry taco seasoning mix

1 cup of Guacamole (can be made from recipe above)

1 cup grated Cheese

1 small tomato diced

¼ cup sliced Olives

Chopped Cilantro or sliced green onions

Heat and stir the bean dip until spreadable. Spread bead dip

onto a 10-inch serving plate or pie plate.


In a small bowl, mix taco seasoning mix into sour cream.

Spread the sour cream mixture over the beans.

Then spread on the guacamole, and then the cheese, then tomatoes, olives and the cilantro.

Serve with your favorite scoop corn chips.

You can leave out things you don’t like and add others. My aunt

adds seasoned hamburger mix. I also like to add thawed, frozen

corn. I have had it with sliced radishes, or black beans, and salsa.
