Slow Cooker Steak with Mushrooms

It is the stressful time of the year. With the rush of the holidays, I like to throw dinner in the crock-pot and come back hours later to a great no fuss dinner. I just throw some noodles into boiling water and we are eating in about 20 minutes. A tossed salad and some fresh fruit we have a full dinner. I hope with all the shopping and stress of the holidays this recipe helps a bit.

Slow Cooker Steak with Mushrooms

Serves 6 to 8

1 ½ pounds of round steak or stew meat

1 can diced tomatoes, 14 ½ oz.

1 Cup diced onion

10 oz. can of beef broth

1 Tablespoon Worcestershire sauce

1 carrot sliced into coins

½ green bell pepper, diced (Optional)

8 ounces sliced mushrooms

½ teaspoon pepper

2 teaspoon minced garlic

¼ cup cornstarch

½ cup water

Mashed potatoes or hot cooked noodles

Cut the steak into serving pieces and pound the steak a bit to tenderized. Combine tomatoes, onion, beef stock, Worcestershire sauce, carrots, bell pepper, mushrooms, pepper and garlic powder in a slow cooker. Stir to combine, add the raw steak. Cook on low for 8 hours, or on high for 6 hours. When ready to serve, combine the cornstarch and water and there are no lumps. Remove the steak to a serving platter, cover with foil. Stir in the cornstarch mixture to the broth and heat on high until thickened. Taste and adjust seasoning. Pour sauce over the steak and serve over the mashed potatoes or noodles.

**Gluten free: Check to be sure the Worcestershire Sauce and beef broth are both gluten free and use Gluten Free Noodles or mashed potatoes.

Hope this is a recipe your family will love. Jan@dairykeen.com
